It is a white to light yellow amorphous powder, odorless and insoluble in water, but can slowly dissolve in alkaline solution to form a viscous gel. The substance is pH-sensitive, stable under acidic conditions and soluble in alkaline environments. As a food thickener, it has been approved by the International Codex Alimentarius Commission and other organizations for use in wheat flour products and bread production, and is also used in the medical field for hemostatic materials and drug delivery systems.
