The average molecular weight of chitosan oligosaccharide is less than 5,000 Da.Chitosan oligosaccharide has better water solubility than Chitosan. It is yellow powder with molecularformula of C12H24N2O9 and CAS number of 148411-57-8. Production process of chitosan oligosaccharide includes, dissolving chitosan in diluted hydrochloricacid solvent, controling the PH value between 5.0 and 5.5, enzymolyzing with cellulase and papainunder 50oC temperature, filtering, concentrating, spray drying, sieving and getting chitosanoligosaccharide powder.
