Supercooling refers to the phenomenon that the temperature of the solution is below the freezing point value without freezing. When a supercooled solution is stirred, it crystallizes. After crystallization, the solution will release a certain amount of heat, which is called the heat of crystallization. As shown in the figure below, the solution is supercooled and remains a liquid below the freezing point (F1). When shaken or stirred, it will crystallize (S), releasing the crystallization heat to make the temperature of the solution rise. The temperature of the sample rises to the freezing point platform (F2); After that, the temperature continued to drop. The temperature of the platform is the freezing point of the solution.
